Simple Jammy Biscuits

Whipped up homemade berry jam in the Rediffusion soup maker (YES - it makes jam too! Is there anything we canโ€™t do?) then sandwiched it between buttery biscuits for the sweetest holiday treat ๐Ÿ“๐Ÿชโค๏ธ

Ingredients:

  • 150g butter, softened
  • 75g sugar
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 225g plain flour
  • 1 tbsp cornflour
  • 300g berries (fresh or frozen)
  • 150g sugar
  • 1 tbsp lemon juice

Method

1. Make the jam

Add the berries, sugar, and lemon juice to the Rediffusion Soup Maker and select the jam function. Once the cycle is complete, transfer the jam into a clean jar and allow it to cool fully.

2. Prepare the dough

Cream together the butter, sugar, vanilla, and egg yolk until light and fluffy. Add the flour and cornflour and mix until a soft dough forms. Chill for at least 30 minutes to make it easier to roll.

3. Shape & bake

Roll the dough out on a lightly floured surface and cut into circles. Cut small centres out of half the biscuits to create the tops. Bake at 180ยฐC for 10โ€“12 minutes, or until the edges are lightly golden.

4. Assemble

Spread a layer of the cooled jam onto the whole biscuits, then gently press the cut-out tops on to finish.
